Sonoma, California based Journeyman Meat Co. is dedicated to creating artisanal salumi, sausage, and cured meat with the same skill and attention that goes into producing wine. Founder Pete Seghesio brings his considerable winemaking skills to bear in creating this salumi for us to use in our tasting room. The Sec Salumi incorporates our brut base wine into a traditional French spice recipe. This salumi is naturally best paired with our 2018 Estate Brut sparkling wine to complement the components.
